14” Dutch Oven
Build your fire for the purpose of sauteing veggies and meat. You can use a propane range/stovetop for this purpose if you prefer.
Prep and enjoy a great cup of Cowboy Kaffe beside the campfire.
While the coals are warming, prep the veggies by dicing green pepper and onion.
Dice bacon into ½”-1” pieces
Place Dutch oven over fire and warm.
Saute bacon & sausage until browned. Using oil from the meat, add directly the chopped onion & peppers and cook until browning begins to occur.
At this point there should still be some oil remaining in the cook. Add potatoes directly to the pot with the other ingredients. If it appears like it needs more oil, optionally add a tbsp of cooking oil to help brown the potatoes.
Season potatoes with your favorite Dutch Oven seasoning. We use Wyoming & Californio.
Cook potatoes until browned. Crack 8 eggs directly over top of potatoes.
Cover and cook using charcoal at 375. For a 14” oven this is 19 coals on top and 13 coals underneath.
Cook for about 30-40 minutes checking and rotating the pot and lid every 10-15 minutes. Weather conditions will vary so this time may need to be adjusted.
When the eggs appear almost set or where you prefer add the shredded cheese and cover to melt.
Add green chile over top to finish.
Serve with tortillas warmed over your fire.
Have fun cooking outdoors. As with all outdoor cooking, weather conditions will make specific timing different. Remember, everything tastes better with friends.
